So I just had a disagreement with my husband about what my daughter eats at lunch time and I'm looking for a little reassurance or help.
First of all, my daughter's diet is pretty balanced. She eats fruit for breakfast every morning with either yogurt, a pancake, or a piece of french toast, scrambled eggs or omelet. For dinner she always has either fresh or frozen vegetables with some sort of meat. chicken, pork, turkey etc. All freshly made, nothing processed. Her snacks are organic fruit snacks, fruit bars, organic rice cake type cookies, cheerios or fruit. Milk with every meal.
Lunch is where I either struggle or get lazy or need something easy! When we are out and about for the day I always give her a fruit and veggie pouch and then something like cheerios to eat or if we eat out we order grilled chicken and that's all fine. But when we are home she gets things like pasta (whole wheat), grilled cheese (whole wheat bread and deli cheese) and mac and cheese.
Today our disagreement was about the mac and cheese. It's a packaged type that I buy (lots of preservatives) and when I make it I keep the leftovers in the fridge and it will probably serve for two or three more lunches for the week. So in total, my daughter gets maybe four processed meals a week. I also always add fresh vegetable to it. Usually broccoli. So my argument is that since she eats really well and balanced for every other meal, that having this processed food is perfectly fine. My husband is saying absolutely not and pretty much made me feel awful for giving it to her. The funny thing is that my husband and I have this type of pasta or rice as a side everyday!
So my question is, should I switch to an organic mac and cheese? keep just giving her what I'm giving her? Any other easy ideas for lunch? I'm really just looking for something quick and easy to make!
