This isn't a recipe but a tip! Swap out white rice (or even pasta) for quinoa. It's higher in fiber and for a ton of reasons a better choice. I usually cook large quantities of it and put a 1/4 a cup or so in all sorts of things. Sneak it into the kids soup, pancakes, salads, tacos, etc. I even put it in cookies once!
I've started making my own chicken nuggets using ground chicken, so quinoa chicken nuggets (buffalo for me) is on my to-do list.
