Hi-Fibre meals please!

Hi everyone, im new here, and I need help.
My 1 year old has been put on a hi fibre diet and I have no idea what kind of meals to make him? he is such a fussy eater and isn't a fan of texture.
Im a working mom so in the past I haven't had much time to sit down and work out a meal plan as yet. Any ideas would be great!

This isn't a recipe but a tip! Swap out white rice (or even pasta) for quinoa. It's higher in fiber and for a ton of reasons a better choice. I usually cook large quantities of it and put a 1/4 a cup or so in all sorts of things. Sneak it into the kids soup, pancakes, salads, tacos, etc. I even put it in cookies once!

I've started making my own chicken nuggets using ground chicken, so quinoa chicken nuggets (buffalo for me) is on my to-do list.

Can you make smoothies with powder fiber supplements in them? I'm not sure if that's OK for a toddler, but I'd ask your pediatrician. I have a picky eater, and smoothies are a lifesaver for us.
